Moroccan Sweet Carrot Salad
- 8 x Carrots, peeled and shredded, up to 10
- Raisins, if you like
- 1/3 c. Honey
- 1/4 c. Lemon juice
- 1 Tbsp. Orange flower water, (you can leave it out but it is what gives it a more Middle Eastern flavor)
- Dissolve honey in lemon juice, add in carrots and raisins, mix well, sprinkle with orange flower water and let sit one hour or possibly longer before serving, I make this for Shabbat a lot as it gets better the longer it "marinates".
