Moroccan Chicken With Olives
Ingredients
- 6 x Chicken breasts, skin, bone
- 1 c. Chicken stock
- 1 x Lemon, zest of
- 1 c. Greek olives, green and pit
- Fresh mint, chop coarse, opt
- 3 cl Garlic, mince
- 2 Tbsp. Extra virgin olive oil
- 1 1/2 tsp Grnd ginger
- 1/2 tsp Grnd turmeric
- 1/2 tsp Paprika
- 1/4 tsp Grnd cinnamon
- Fresh grnd pepper and salt
Directions
- Combine spice mix in large bowl. Add in chicken breasts and coat well with mix. Let stand loosely covered for 1 hour. Brown chicken on both sides in large skillet (there is no need to add in additional oil) over med-high heat. Add in lemon zest and olives and saute/fry for about 5 min. Add in chicken stock. Cover and simmer for 10 to 15 min. Garnish with fresh mint.
