  • Moroccan Beef Kefta On Skewers With Chopped Vegetable Salad

    Ingredients

    • 1 1/2 lb Grnd beef
    • 1/2 c. Grated onion
    • 2 x Garlic cloves finely chopped
    • 2 Tbsp. Finely-minced fresh parsley
    • 2 Tbsp. Finely-minced fresh coriander
    • 3 tsp Finely-minced fresh mint
    •     (or possibly 1 tspn dry mint)
    • 2 tsp Finely-minced fresh marjoram
    •     (or possibly 1/2 tspn dry marjoram)
    •     Salt to taste
    •     Freshly-grnd black pepper to taste
    • 1/2 tsp Grnd cumin
    • 1/2 tsp Paprika
    • 1/4 tsp Cayenne pepper
    • 1 x Seedless cucumber peeled, diced fine
    • 1 lrg Tomato seeded, diced fine
    • 1 x Green bell pepper seeded, diced fine
    • 1 x Warm Italian-style pepper seeded, diced fine
    • 2 x Garlic cloves finely chopped
    • 3 Tbsp. Finely-minced fresh mint
    • 2 Tbsp. Red wine vinegar
    • 2 Tbsp. Extra virgin olive oil - (to 3 tbspns)

    Directions

    1. In a large bowl combine the beef, onion, garlic, parsley, coriander, mint, marjoram, salt, pepper, cumin, paprika and cayenne. Cover and let sit for one hour. Soak 12 wooden skewers in water for one hour.
    2. In a separate bowl combine cucumber, tomato, bell pepper, warm pepper, garlic, mint, red wine vinegar, extra virgin olive oil, salt and pepper tossing to combine. Cover and let marinate at room temperature till ready to serve.
    3. Preheat grill or possibly broiler.
    4. Dip hands into a bowl of water. Shape and pack about a 1/3 c. of the meat mix into 2 sausage-shapes on a soaked wooden skewer. Repeat procedure for remaining meat and skewers.
    5. Grill the keftas on both sides till cooked through, about 3 to 4 min per side. Serve warm with minced salad.
    6. This recipe yields 6 servings.
