    Delicious breakfast muffins. Get a fruit and veggie serving in cake! And I made some alterations to cut down on fat and sugar which worked very well.

    Ingredients

    • 2 C. flour
    • 1 1/4 C. brown sugar (or 1/4 C. brown sugar and 1t. stivea, a natural sugar substitute from the health food store)
    • 2 t. baking soda
    • 2 T. baking powder
    • 2 t. cinnamon
    • 1/2 t. or less salt
    • 1/2 C. raisans
    • 1/2 C. nuts
    • 1/2 C. flaked coconut
    • 3 eggs
    • 3/4 C. oil (or 1/4 C. oil and 1/2 C. unsweetened applesauce)
    • 1 t. vanilla
    • 2 C. grated peeled carrots
    • 1 C. grated apple

    Directions

    1. Combine first 8 ingredients in large bowl. Stir well.
    2. Beat eggs, oil, vanilla, carrots, apple in medium bowl.
    3. Add dry ingredients and stir until moistened.
    4. Spoon into greased muffin pan.
    5. Bake at 350 F. for 20 minutes or so.
