Ingredients

  • 1/2 c. Math, (tiny brown gram like green gram) dal (if not available use green moong dal)
  • 2 c. Wheat flour
  • 1/2 tsp Cumin seeds crushed coarsely
  • 1 tsp Coriander seeds crushed coarsely
  • 2 tsp Red chilli pwdr
  • 1/2 tsp Garam masala, (optional)
  • 3 pch asafoetida, (3 to 4)
  •     Salt to taste
  • 2 Tbsp. Ghee
  •     Oil to shallow fry

Directions

  1. Wash and soak dal for 4 hrs, drain, skins intact.
  2. Mix all ingredients, except oil.
  3. Add in very little water at a time, and knead into a pliable dough.
  4. Take a small lump at a time, make round.
  5. Using dry flour for dusting, roll into round as thin as possible.
  6. Roast on griddle, cooking on both sides.
  7. Drizzle a little oil on each side
  8. Press with a small wooden presser until both sides are crisp.
  9. Serve warm, or possibly cold very well before storing in a tight container.
  10. Serve with pickles, jam, chutney or possibly curds.
  11. Making time: 45 min
  12. Makes: 15-16 moongdis
  13. Shelflife: 2 weeks or possibly more
