    Monterey Spaghetti Casserole

    Ingredients

    • 4 oz. spaghetti, broken in half
    • 1 egg
    • 1 cup (8 ounces) sour cream
    • 1/4 cup grated Parmesan cheese
    • 2 cloves garlic, minced
    • 2 cups shredded Monterey Jack cheese
    • 1 8 oz. bag fresh spinach, cooked and drained and chopped
    • 1 can (2.8 ounces) french-fried onions, divided

    Directions

    1. Cook spaghetti according to package directions.
    2. Meanwhile, in a medium bowl, beat egg.
    3. Add sour cream, Parmesan cheese and garlic.
    4. Drain spaghetti; add to egg mixture with Monterey Jack cheese, spinach and half of the onions.
    5. Pour into a greased 2-qt. baking dish.
    6. Cover and bake at 350° for 30 minutes or until heated though.
    7. Top with remaining onions; return to the oven uncovered for 5 minutes or until onions are golden brown.
