  • Mom's Zucchini Bread

    Ingredients

    • 3 cups all purpose flour
    • 1 cup vegetable oil
    • 1 tsp salt
    • 2 1/4 cups white sugar
    • 1 tsp baking soda
    • 3 tsp vanilla extract
    • 1 tsp baking powder
    • 2 cups grated zucchini
    • 3 tsp ground cinnamon
    • 3 eggs
    • 1 cup chopped walnuts (optional)

    Directions

    1. Grease and flour 2 8x4 inch pans. Preheat oven to 325 degrees F (165 C)
    2. Grate zucchini
    3. sift flour, salt baking powder, baking soda, and cinnamon together in a bowl
    4. beat eggs, oil, vanilla and sugar together in a LARGE bowl. Add dry ingredients to the creamed mixture and beat well. Stir in zucchini (and walnuts) until well combined Pour batter into prepared pans.
    5. Bake 40-60 min or until toothpick comes out clean. Cool on rack for 15 min. Remove bread from pan and completely cool.

      I've made this plenty of times, and everyone loves it. Good for any occasion and everyone will want the recipe. Very good with cream cheese. I find it good without the walnuts.(I'm not a big nut fan)
