Mom's Yellow Squash Casserole

Ingredients

  • 2 c. yellow squash, sliced & boiled (but not too soft)
  • 1 c. whole lowfat milk
  • 1 sm. onion, diced
  • 12 saltines, crushed
  • 2 Large eggs, beaten
  • 1 c. grated Velveeta (plus 3-4 slices for later)
  • Salt & pepper to taste

Directions

  1. Mix squash, milk, onion, saltines, eggs, grated cheese and salt and pepper in large bowl.
  2. Pour into greased 1 1/2 qt casserole dish.
  3. Bake 20 min at 350 degrees.
  4. Lay slices across top and continue baking another 10 min.
