Mom's Stuffed French Toast

Ingredients

  • 1 (8 ounce.) cream cheese
  • 1 teaspoon vanilla
  • 1/2 c. minced walnuts
  • 1 (16 ounce.) loaf French bread
  • 4 Large eggs
  • 1 c. whipping cream
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon nutmeg
  • 1 jar (12 ounce.) apricot preserves
  • 1/2 c. orange juice

Directions

  1. Beat together cream cheese and 1 tsp. vanilla till fluffy. Stir in nuts; set aside.
  2. Cut bread into 10-12 1/2 inch slices. Cut a pocket in the top of each. Fill each with 1 1/2 Tbsp. of cheese mix.
  3. Beat together Large eggs, whipping cream, the 1/2 tsp. vanilla and nutmeg. Using tongs, dip the filled bread slices in egg mix, being careful not to squeeze out filling. Cook on both sides till golden.
  4. Meanwhile heat together the preserves and juice. Drizzle over warm French toast. Makes 10-12 stuffed slices. Very filling! Delicious!
