    Mom's Pinwheels (Stuffing topped burgers)

    This is a recipe Mom made when we were growing up to help stretch a buck. And we all loved Pinwheels. Mom made them with her own Bread Stuffing, so it was flavors from Thanksgiving Stuffing all year round. My grown brother called me a few years ago asking if I could tell him how Mom made Pinwheels, he now makes them for his family too. If you dont want to use this stuffing recipe use your own or even a boxed stuffing mix, but we love Mom's stuffing. We sometimes serve it with cranberry sauce because it goes well the stuffing.

    Ingredients

    • For Hamburgers:
    • 2lbs ground beef
    • 2 eggs
    • 1/4 to 1/2 cup finely diced onion
    • 1/2 cup dry breadcrumbs
    • 3/4 tsp garlic powder
    • 1 tsp salt
    • 1/2 tsp pepper
    • 1 tbsp worchestershire sauce
    • 1/2 cup milk
    • For Stuffing:
    • 6 tbsp diced onions
    • 1/2 cup butter
    • 8 cups white bread cubes (approx 14 slices)
    • 1/2 tsp salt
    • 1/2 tsp pepper
    • 1 tsp poultry seasoning (and extra to taste)
    • 1/2 ground sage (optional)
    • 8 tbsp water or chicken broth

    Directions

    1. Preheat oven 375
    2. Line baking sheet with foil
    3. Mix all the Hamburger ingredients well and form into hamburgers, I usually get 10 or 11 burgers. Place them on the baking sheet and make a small well or indent in the center of each patty.
    4. For the stuffing:
    5. Melt butter in saute pan and cook onion till soft and tender.
    6. Place bread cubes in a lg bowl and add the water or broth. you may need to add a bit more water then called for to soften the bread.
    7. Pour the butter and onion mixture into the bread. Add the salt, pepper and poultry seasoning. Stir well with a large fork working the butter through all of the bread. It will break apart and be smooth there will be no cubes left, taste test it now and add more salt and poultry seasoning.
    8. Once well mixed, place heaping piles of stuffing on top of each patty forming a nice mound of stuffing on each.
    9. Bake for approx 40-50 mins till burger cooked.
