  • Mock Beef And Barley Stew

    Ingredients

    • 12 ounce Yves(r) Veggie Grnd Round
    • 1 lrg Onion minced
    • 5 sm Red potatoes peeled and cubed
    • 1/2 c. Celery minced
    • 1 c. Carrots minced
    • 1 c. Mushrooms sliced
    • 15 ounce Canned tomatoes undrained
    • 2 c. Vegetable broth
    • 1 tsp Salt
    • 1/2 tsp Pepper
    • 2 x cloves Garlic chopped
    • 1/4 tsp Dry oregano
    • 2/3 c. Barley

    Directions

    1. In a nonstick skillet which has been sprayed with Pam, saute/fry onions till soft, about 5 mins. Add in garlic and Veggie Grnd Round. Saute/fry additional 2 - 3 mins.
    2. Spray crockpot with Pam. Add in all the ingredients.
    3. Cover and cook on LOW all day.
    4. NOTES : This is what I made for dinner tonight. It was very hearty and tasty. My husband actually had seconds and said he'd like to have this again soon.
    5. I failed to mention to him which this was made with soy...he really couldn't tell.
    6. If you do not have a crockpot, I do not see why this couldn't be made on the stovetop.
