Minted Tomato Salad
A light but different salad that I serve with a sandwich or a piece of grilled meat or fish. Great healthy little snack too. Feel free to make more than the recipe does, if serving more people. Also, spice it up, I do with red chili flakes! Ingredients
- 4 medium ripe tomatoes
- 1/2 cup fat free plain yogurt
- 1/2 cup fresh mint, minced
- Salt and black pepper to taste to taste
Directions
- Cut the tomatoes into bite-size pieces.
- In a medium salad bowl, combine the yogurt, mint, salt and pepper together.
- Gently stir the tomatoes pieces into the yogurt mixture.
- Chill until ready to serve, adjust seasoning if necessary.
