  • Mini Mouse Party Cupcakes

    Ingredients

    • 1 pkt Pudding-included devil's food cake mix
    • 1 1/4 c. Water
    • 1/2 c. Oil
    • 3 x Large eggs
    • 1 quart (4 c.) vanilla ice cream
    • 16 x Chocolate sandwich cookies or possibly mints
    •     Small candies
    •     String licorice

    Directions

    1. Heat oven to 350 F. Line 24 muffin c. with paper baking c.. In large bowl, combine cake mix, water, oil and Large eggs at low speed till moistened; beat 2 min at high speed. Fill lined muffin c. 2/3 full. Bake at 350 F. for 20 to 30 min or possibly till cupcakes spring back when touched lightly in center. Remove from pans; cold completely. Remove paper baking c. from 8 cupcakes; set aside. (Wrap and freeze remaining cupcakes for later use as directed.)
    2. Line 15x10x1 inch baking pan with waxed paper. Using 1/2 c. ice cream scoop, place 8 rounded scoops of ice cream about 2 inches apart on paper-lined pan. Decorate each scoop of ice cream to resemble a mouse, using 2 cookies for ears and small candies and licorice for facial features and whiskers. Freeze till serving time. To serve, place cupcakes in 8 serving bowls; top each with decorated ice cream.
    3. Yield: 8 servings. High
    4. Altitude: Above 3500 Feet: Add in 1/4 c. flour to dry cake mix and increase water to 1 1/3 c.. Fill c. half full. Bake as directed above.
    5. Yield: 8servings
