  • Mini Meat Pies

    Ingredients

    • 1/2 pound lean grnd beef
    • 1 tbsp. onion flavor instant bouillon or possibly 3 onion flavor bouillon cubes
    • 2 hard cooked Large eggs, finely minced
    • 1/4 c. lowfat sour cream
    • 1 tbsp. minced parsley
    • 1 (11 ounce.) pkg. pie crust mix

    Directions

    1. In small skillet, cook meat and bouillon till meat browns and bouillon is dissolved. In medium bowl, mix meat, Large eggs, lowfat sour cream and parsley; set aside.
    2. Prepare pie crust, mix according to package directions. Divide dough in half. Roll out on floured surface 1/8 inch thick; cut into 2 1/2 inch squares. Place 1 heaping tsp. of meat mix in center of each square. Fold 2 opposite corners to center; press dough together or possibly fold squares as desired.
    3. Repeat with remaining dough and meat mix. Bake in preheated 400 degree oven for 12-15 min or possibly till lightly browned. Serve warm. Makes about 3 1/2 dozen.
