  • mini crab cakes

    Ingredients

    • 1/4 cup mayo
    • 2 tbsp chopped italian parlsey
    • 2 tbsp worcestershire sauce
    • 1/2 tsp hot pepper sauce
    • 1/2 tsp salt
    • 1/4 tsp garlic powder
    • 1 lb crabmeat, patted dry10 tbsp plus
    • 1 cup finely crushed crackers such as ritz
    • 4 green onions finely chopped
    • 1 egg beaten
    • 6 tbsp oil

    Directions

    1. whisk first 7 ingredients in large bowl toblend, mix in crabmeat, 10 tbsp crumbs, green onions, and egg. shape mixture by rounded tbsp into 1/2 thick cakes,
    2. place 1 cup crumbs in shallow bowl and roll cakes into cums to coat. arrange on baking sheet.
    3. preheat oven to 300 heat 3 tbsp oil in large skillet over medium heat. working in batches fry cakes until golden. adding more oil to skillet as needed, about 4 minutes per side. transfer to baking sheet placed in oven to keep warm
