Mini Cheesecake Cookies
Very pretty for the holidays if made in foil cupcake holders and cherry pie topping Ingredients
- 24 vanilla wafer cookies
- 3 (8 ounce.) Packages cream cheese
- 4 Large eggs
- 1 c. sugar
- 1 teaspoon vanilla
- Cherry, blueberry, pineapple, strawberry pie filling or possibly jelly or possibly jam
Directions
- Put one wafer, flat side down in each paper cupcake holder.
- Mix softened cream cheese then beat in 4 Large eggs.
- Add in 1 c. sugar; mix well.
- Add in vanilla and beat again.
- Pour into prepared cupcake holders.
- Bake 350 degrees 15-20 min.
- When cold, top off with your choice. Keep refrigerated.
