Mini Apple and Cinnamon Muffins

- 1 egg
- 125ml skimmed milk
- 3 tbsp olive oil
- 150g plain flour
- 50g brown sugar
- 1/2 tbsp cinnamon
- 1/2 tbsp baking powder
- 150g apple, skinned, cored and finely diced
Directions
- Preheat the oven to 200 degrees C. Lightly beat the egg in a bowl with the milk and oil.
- In a larger bowl, sift in the flour with the sugar, cinnamon and baking powder. Mix in the diced apple.
- Tip in the wet mixture and fold in until just mixed.
- Spoon into a couple of lined mini muffin trays (mixture fills about 36 holes). Top each with a little more brown sugar if desired. Bake for about 15-20 minutes until risen and brown.
