    Minced Chicken Mee Hoon Soup

    Ingredients

    • For the minced chicken
    • 400g minced chicken
    • 1 tsp dark soya sauce
    • 1 tsp light soya sauce
    • 1/2 tbsp corn flour
    • 1/2 tsp sugar
    • Salt and pepper to taste
    • 3 tbsp oil
    • Others
    • 1 liter chicken stock (you can also use chicken cube)
    • Mee hoon (as needed) - blanched to soften
    • Spring onions - shredded
    • Bean sprouts - blanched to soften
    • 4 shallots - sliced thinly
    • Salt and pepper to taste

    Directions

    1. Mix chicken with the rest of the ingredients except oil.
    2. Heat oil and fry shallots till crispy and dark brown in color.
    3. Remove and keep aside.
    4. Add chicken in the same oil and do the same.
    5. While frying, break up the chicken into little bits.
    6. Remove and keep aside.
    7. In the same oil/pan, pour chicken stock.
    8. Season with salt and pepper
    9. Simmer soup till boiling point.
    10. Add noodles in a bowl.
    11. Top with fried minced chicken, shallots, bean sprouts and spring
    12. onion.
    13. Pour soup over and serve immediately.
