Midwestern Garden Salsa

- 2 cup chopped cilantro
- 2 yellow/white garden onions diced
- 1 sweet onion
- 15 tomatoes diced (TIP-if you dont have fancy chopper use the julienne attatchment of your mandolin grater and a silicone glove to dice perfectly)
- 15 tomatoes pureed
- 8 Green Bell peppers (diced)
- 4 heads Garlic (minced)
- 2 limes (squeezed)
- 4 tbsp cumin seeds and black pepper corns(grind)
- 2 jalepenos(optional)
- 3 tbsp smoked paprika
- 2 tbsp chili powder
- salt to taste
Directions
- Blend all ingredients.
- Cook for about 20 minutes,pour into jars.
- Makes 2 quarts and 4 pints,water bath can for 20 minutes.
