This is one of my favorite times of the the year to cook. The reason being is that the farmer’s markets are loaded with fresh food! It’s so much fun to stroll the aisles, chatting with the farmers and vendors while shopping for great produce and ingredients to cook with. This week’s menu is inspired by my weekly trip to the market. I picked up some chicken, carrots and onions along with lots of other fresh veggies to enjoy as well. Not only did I get great food for my family, I also like that I’m supporting local farms and businesses.
This week’s recipes are all super easy to make with very little prep time so you can have supper on the table in about 30 minutes. To pull this menu together, I like to make the chicken and pineapple skewers the night before and keep them in the fridge until time to grill. The veggies can be prepped and stored as well. Making the Pecan Pie tarts the night before is also a short cut time saving trick too. This is one menu that’s going in my suppertime rotation each and every month. Now, it’s time to get cooking!
