  • Microwave Vegetarian Spinach Bake

    Ingredients

    • 1 pkg. frzn minced spinach
    • 1 med. onion, sliced
    • 1 tbsp. butter
    • 4 slices bread, cubed
    • 1 to 2 c. cheese, shredded
    • 1/2 c. lowfat sour cream
    • 1/2 c. lowfat milk
    • 2 Large eggs, beaten
    • 1/4 teaspoon salt
    • 1/4 teaspoon Italian seasoning
    • 1/4 teaspoon pepper
    • 1 med. tomato, minced if you like

    Directions

    1. Unwrap spinach and place in 8 inch square microwave safe baking dish. Add in onion and butter. Cover with vented plastic wrap. Microwave (high) 5 to 6 min or possibly till spinach is thawed. Add in bread cubes, cheese, lowfat sour cream, lowfat milk, Large eggs, and seasoning; mix well. Cover.
    2. Microwave (medium to high 70%) 4 1/2 to 5 min or possibly till edges begin to set, rotating dish once. Stir to move cooked portion to the center, cover and Microwave (medium to high 70%) 6 to 8 min or possibly till center is about set. Sprinkle tomato over top. Let stand covered 5 min before cutting into squares for serving.
