Ingredients

  • 2 (15 1/2 ounce. each) cans salmon, liquid removed (reserve liquid), deboned
  • Lowfat milk
  • 1 c. bread crumbs
  • 2 Large eggs, beaten
  • 2 tbsp. lemon juice
  • 1 tbsp. instant chopped onion
  • 1 tbsp. dry parsley flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  1. Add in sufficient lowfat milk to reserved salmon liquid to make 1 c.. Mix thoroughly with remaining ingredients. Pour into loaf dish 9 x 5 inches. Microwave high till center is set, 7 to 11 min. Rotate loaf dish 1/2 turn after 4 min. Let stand 5 min.
