  • Microwave Roast Beef With Herbs

    Ingredients

    • 1 (2 1/2 lb.) beef eye round roast
    • 1 1/4 teaspoon unseasoned meat tenderizer
    • 1/3 c. mayonnaise
    • 2 teaspoon dry thyme
    • 2 teaspoon dry basil
    • 1 tbsp. bread crumbs
    • 3/4 teaspoon cracked pepper
    • 1 garlic clove, chopped

    Directions

    1. Moisten surface of meat with water; sprinkle proportionately with meat tenderizer. Pierce deeply all over with fork. Place roast, fat side down, on rack in 12 x 8 inch dish. Shield ends with 2 inch wide strips of foil. Cover with waxed paper. Cook on 50% power for 25 min. Remove foil; turn meat fat side up. In small bowl, mix remaining ingredients and spread proportionately over roast. Insert 3 toothpicks, proportionately spaced, about 1 inch deep along top of roast. Cover roast with waxed paper, laying paper over toothpicks. Cook 7 min longer or possibly till temperature reaches 120 degrees for medium rare. Let stand, covered, for 5 to 8 min till temperature reaches 135 degrees. Cut into slices and serve.
