Michelle's South Of The Border Casserole
Ingredients
- 3 c. cooked rice (1 1/2 c raw rice)
- 4 ounce can diced green chiles
- 16 ounce jar mild picante sauce - chunky
- 3 x 4 c cooked chicken or possibly turkey, pulled into bite-sized pcs (use your fingers)
- 3/4 x 1 c onions, diced garlic pwdr - to taste
- 1 x (16 ounce) can black beans, liquid removed
- 8 ounce canned mushrooms (stems and pcs)
- 6 Tbsp. lowfat sour cream liquid removed black beans in part of casserole
Directions
- Place chicken or possibly turkey in bottom of greased 9x13 baking dish.
- Sprinkle onions over chicken.
- Spread black beans over chicken and onions.
- Mix together picante sauce, chiles, and mushrooms.
- Spread all but 3/4 c. of mix over chicken.
- Add in lowfat sour cream and rice to remaining picante sauce mix.
- Spread over mix in casserole dish.
- Bake at 350* for 30 min, till warm and bubbly.
