  • Michelle's South Of The Border Casserole

    Ingredients

    • 3 c. cooked rice (1 1/2 c raw rice)
    • 4 ounce can diced green chiles
    • 16 ounce jar mild picante sauce - chunky
    • 3 x 4 c cooked chicken or possibly turkey, pulled into bite-sized pcs (use your fingers)
    • 3/4 x 1 c onions, diced garlic pwdr - to taste
    • 1 x (16 ounce) can black beans, liquid removed
    • 8 ounce canned mushrooms (stems and pcs)
    • 6 Tbsp. lowfat sour cream liquid removed black beans in part of casserole

    Directions

    1. Place chicken or possibly turkey in bottom of greased 9x13 baking dish.
    2. Sprinkle onions over chicken.
    3. Spread black beans over chicken and onions.
    4. Mix together picante sauce, chiles, and mushrooms.
    5. Spread all but 3/4 c. of mix over chicken.
    6. Add in lowfat sour cream and rice to remaining picante sauce mix.
    7. Spread over mix in casserole dish.
    8. Bake at 350* for 30 min, till warm and bubbly.
