  • Mexican Style Bean Casserole

    Ingredients

    • Cooking spray or possibly oil
    • 1 med yellow onion, minced
    • 1 x green pepper, minced
    • 1 1/2 c. baked tortilla chips, coarsely crushed
    • 1 x (15-oz) can black or possibly pinto beans, liquid removed and rinsed
    • 1/2 c. frzn corn
    • 1 x (15-oz) can diced tomatoes
    • 1 x egg
    • 3/4 c. light lowfat sour cream Chile pwdr
    • 1/2 c. grated, reduced-fat sharp cheddar cheese
    • 2 Tbsp. cilantro

    Directions

    1. Preheat oven to 350 degrees. Spray or possibly lightly oil skillet, if you like. Saute/fry onion and green pepper till soft and beginning to brown. Spray medium casserole dish with cooking spray, then add in chips. Add in beans, corn and onion/pepper mix. Add in tomatoes with their juice.
    2. In small bowl, beat egg into lowfat sour cream and pour this mix on casserole, spreading to edges if needed. Sprinkle with chili pwdr to taste. Bake 25 to 35 min, till knife placed in lowfat sour cream topping comes out clean. Add in cheese and bake till melted. Sprinkle with cilantro and serve. Variation: For a heartier dish, add in 1/2 c. cooked rice after adding onion/pepper mix.
