Mexican Meatloaf Roll
Ingredients
- 1 1/2 lbs. grnd beef
- 1/4 c. oats, uncooked
- 2 large eggs
- 1 T Worcestershire sauce
- 1 teaspoon pepper
- 1 (8 ounce) pkg. cream cheese, softened
- 1 (4 ounce) can green chilies, liquid removed
- 3/4 c. salsa
Directions
- Put together meat, oats, large eggs, Worcestershire sauce, and pepper. Mix well. On wax paper, press mix into rectangle. Put together cream cheese and chilies; mix well. Spread this mix over meat to within 1 inch of outer edge. Roll jelly roll fashion. Place in baking dish and bake at 350 degrees for 40 min. Top with salsa and bake 10 min. Let stand 10 min before serving.
