  • Mexican Meatloaf

    Had my little brother and nephew over for dinner. They are both 9. It was my first time making it like this. I got the idea from my mom. Because it was my first time, the recipe might need a little (or a lot depending on the person) adjustments. My family, however, really liked it. Hope you do too.

    Ingredients

    • 2lbs of ground turkey
    • 1 cup (or more) of bread crumbs
    • 1/2 can of black beans
    • 1 cup corn
    • Chopped Cilantro to taste
    • 1 1/2 cup Chopped peppers (I used jalapenos and green and red bell peppers)
    • 1/2 cup Onion
    • 2 to 3 eggs
    • 2 packs taco seasoning or seasoning to taste

    Directions

    1. Mix Meat with Seasoning, then add veggies, add breadcrumbs and then add eggs. Bake on 425 for 45 min. Let cool for ten minutes to help it stay together better. Serve with ketchup or tomato based sauce or with taco sauce or salsa, cilantro, and sour cream.
    2. *You can also cut meat loaf and saute it until a nice crust develops on each piece. Then proceed to top with desired sauces.
