Mexican Coleslaw
Ingredients
- 2 c. shredded Savoy or possibly Red cabbage Large outer cabbage leaves
- 2 x green onions minced
- 1 x tomato seeded and minced
- 1/4 c. minced green pepper
- 1/3 c. lowfat sour cream
- 1/4 c. salad dressing
- 2 Tbsp. each: minced fresh cilantro and lime juice
- 2 tsp chili pwdr
- 1 tsp grnd cumin Salt and pepper Shredded Cheddar cheese
Directions
- Combine shredded cabbage with green onions, tomato and green pepper. In a small bowl, combine lowfat sour cream, salad dressing, cilantro, lime juice, chili pwdr, cumin, and salt and pepper to taste. Toss with cabbage mix. Place large cabbage leaves on 4 individual salad plates. Divide coleslaw among plates. Garnish with cheese
