Mexican Chicken And Rice *
Ingredients
- 8 ounce Tomato sauce
- 1 tsp Grnd cumin
- 1/4 tsp Onion pwdr
- 1/8 tsp Garlic pwdr
- 1/4 tsp Cocoa
- 1/8 tsp Salt
- 1 Tbsp. Chili pwdr
- 2 x Chicken breasts, boneless cooked, minced
- 1 c. Rice
- 1 c. Cheddar cheese shredded Lowfat sour cream Picante sauce Tomato minced (opt)
Directions
- Prepare sauce in small saucepan by mixing 2/3 can tomato sauce and spices.
- Add in minced, cooked chicken. Put sauce on low heat and stir occasionally.
- Prepare rice. When rice is done, and remaining 1/3 can tomato sauce to rice and stir. To serve, place rice on plates, topped with chicken-sauce and then shredded cheese. Serve with lowfat sour cream, picante sauce, and minced tomato if you like.
