• Mexican Burrito Pie

    • 1 (16 ounce) can refried beans
    • 1 c. biscuit mix (Bisquick)
    • 1/4 c. water
    • 1 pound grnd beef
    • 1 c. thick & chunky salsa
    • 1 c. shredded Monterey Jack or possibly Cheddar cheese
    • 1/2 c. lowfat sour cream (optional)


    1. Put together beans, biscuit mix and water in a medium bowl; mix well. Spoon mix into lightly greased pie plate to create a shell. Set aside.Cook grnd beef till browned, drain well. Spoon meat mix over beans. Top with salsa. Bake at 375 degrees for 20 min. Sprinkle with cheese and bake an additional 10 min. Serve with lowfat sour cream. Yield: 6 servings. Have big eaters - Yield 4 servings.
