  • Mexican Bean And Cheese Pockets

    Ingredients

    • 1 can Refried beans, heated
    • 8 x 7" tortillas
    • 1/2 c. Scallions, sliced
    • 8 ounce Monterey jack cheese w/jalapenos, shredded
    • 1 tsp Vegetable oil Salsa, optional

    Directions

    1. Wam tortillas in microwave (or possibly in oven at 350, wrapped in foil, for 5 min).
    2. Put tortillas side by side on a work surface. Place a heaping Tbsp. of hot refried beans in center of each tortillas. Top with 1 Tbsp. scallions, then 1 heaping Tbsp. cheese. Fold 2 opposite sides of each tortilla toward center, overlapping slightly. Fold remaining 2 sides toward the middle.
    3. Heat a large heavy skillet over medium low heat. Brush with oil. Place 4 tortillas pockets smooth side up in skillet. Cook for 5 min per side or possibly till golden brown and crisp. Keep hot in oven while cooking remaining pockets.
    4. Serve warm with salsa for dipping.
    5. Ingredients may be changed to suit individual taste.
