Mediterranean White Bean Soup
Ingredients
- 2 c White beans note)
- 7 c. Water
- 1 x Onion, minced
- 6 x To 7 cloves chopped garlic
- 2 x Potatoes, peeled and minced
- 8 ounce Can water-packed artichokes liquid removed
- 4 ounce Can sliced black olives, liquid removed
- 8 ounce Can tomato sauce
- 1 tsp Italian herb mix
Directions
- Place the beans in a large pot with the water. cover and cook over medium heat for 1 hour. add in the onion and garlic and continue to cook till the beans are tender, 1 to 1 1/2 hrs. add in the potatoes and cook another 20 minutes. add in the remaining ingredients and cook for about 10 more minutes.
- note: if you soak the beans overnight, the total cooking time may be reduced by 30 minutes.
