Mediterranean Leeks And Three Bean Soup

Ingredients

  • 1/3 c. extra virgin olive oil
  • 2 x leeks coarsely minced
  • 2 x celery stalks coarsely minced
  • 2 x garlic cloves chopped
  • 4 c. chicken broth
  • 1 tsp thyme
  • 1 tsp marjoram
  • 1 x bay leaf Freshly-grnd black pepper to taste
  • 1 1/2 c. cooked (or possibly canned) kidney beans
  • 1 1/2 c. cooked (or possibly canned) garbanzo beans
  • 1 lb string beans cut 1" pcs

Directions

  1. Heat oil over moderate heat in large pot. Add in leeks, celery and garlic and saute/fry 3 to 4 min. Add in remaining ingredients except for string beans. Bring soup to a boil, then lower heat. Simmer for 20 min.
  2. Add in string beans and simmer for 15 to 20 min more, till string beans are cooked but still crunchy.
  3. This recipe yields 6 to 8 servings.
