  • Meatloaf With Sour Cream Mushroom Sauce .C/P

    Ingredients

    • 8 ounce lowfat sour cream and onion dip divided
    • 2 1/4 c. soft bread crumbs
    • 1/2 c. finely-minced celery
    • 1/4 c. minced onion
    • 2 Tbsp. minced pimiento
    • 1 tsp dry dillweed
    • 3/4 tsp salt
    • 1 dsh freshly-grnd black pepper
    • 1 lb grnd beef
    • 1 lb grnd pork
    • 2 x Large eggs beaten
    • 1 can cream of mushroom soup - (10 3/4 ounce)

    Directions

    1. In large bowl combine the Large eggs, 1/2 c. of the onion lowfat sour cream dip, the bread crumbs, celery, onion, pimiento, dillweed, salt and pepper; mix well. Blend in the grnd beef and pork.
    2. In crockpot crisscross two 15- by 2-inch strips of foil (use heavy duty or possibly double thickness of regular), across the bottom and up the sides. Place the meat mix atop the foil strips, pressing lightly to create a round loaf, which doesn't touch the sides of the pot.
    3. Cover; cook on LOW heat 8 to 9 hrs. Lift out the meatloaf, using the excess foil as "handles"; drain off excess fat. Serve with Lowfat sour cream Mushroom Sauce.
    4. Lowfat sour cream Mushroom Sauce: In saucepan combine remaining 1/2 c. of onion lowfat sour cream dip and the can of condensed cream of mushroom soup. Heat through, stir occasionally.
