MEATBALLS IN TOASTER OVEN-GLUTEN FREE
"Gluten Free Vegetarian Meatballs" for spaghetti sauce. Preheat toaster oven or regular oven to 400 degrees. Ingredients
- 1 cup Cottage Cheese
- 1 cup Navy Beans, cooked
- 1 cup Organic Pecans or Walnuts, ground
- 1/2 cup Organic Rice, white or brown or mixed
- 1/2 cup Organic flax seed, ground
- 1 cup or 1 Organic onion, chopped fine
- 3 Organic eggs
- 1 teaspoon Italian Seasoning
- 1 teaspoon Garlic & Herb Seasoning
Directions
- Combine all of the above ingredients in a large mixer bowl or in Ninja bowl and blend well.
- Line toaster oven pan or larger pan with parchment paper if using a regular oven.
- Using an ice cream scoop, drop onto parchment paper lined pan and bake for 20 minutes at 400 degrees.
- **NOTE: By eliminating wheat bread crumbs and using rice in their place, and eliminating wheat germ and using ground flax seed, makes this recipe gluten free.
- Browns nicely and can also serve with gravy.
