  • Meatballs And Sauce

    Ingredients

    • 1 1/2 c. Soft white bread cubes
    • 1/3 c. Lowfat milk
    • 1 sm Egg
    • 1 lb Grnd beef
    • 1/2 c. Grated Romano cheese
    • 1/2 tsp Finely chopped garlic
    • 1/4 c. Finely chopped parsley Salt and pepper to taste
    • 2 Tbsp. Extra virgin olive oil
    • 1 lb Spaghetti
    • 1 Tbsp. Butter
    • 3/4 c. Extra virgin olive oil
    • 3/4 c. Chopped garlic
    • 2 can Crushed, peeled tomatoes with their juice (1 lb. 8-oz)
    • 2 x Tomato cans of water
    • 1 tsp Grnd pepper
    • 1 Tbsp. Minced parsley
    • 2 Tbsp. Minced fresh basil
    • 2 tsp Salt Sugar to taste

    Directions

    1. Meatballs:In a bowl mix together the lowfat milk and egg. Add in mix to bowl of bread cubes. Toss to coat. Let the bread stand for 15 min. Mash the bread cubes and add in to a 1 lb. of grnd beef, grated Romano, garlic, and parsley. Mix together. Add in salt and pepper to taste With wet hands form walnut size balls. Brown the meatballs lightly in extra virgin olive oil. Add in meatballs to 6 c. sauce bubbling in pot. Simmer 45 min.
    2. Yield: 4 servings
    3. Tomato sauce:Heat oil in a casserole. Add in garlic and stir till lightly golden brown. Then add in the crushed tomatoes with their juice, 2 tomato cans of water, the grnd pepper, minced parsley, minced fresh basil and salt. Then taste it. If it seems a little acidic, add in a little sugar
    4. Bring to a boil and simmer, stirring occasionally, for 45 min.
