meat ball stew
Ingredients
- 2.5 lb. chopped meat, or chopped turkey
- 6 potatoes, peeled and sliced in thick pieces
- 2 onion, chopped in large pieces
- Another onion, chopped finely - this is to add to the meat
- 1 bag of frozen green beans (or fresh)
- 1 can of diced tomatoes
- 1/2-1 jalepeno pepper
- fresh coriander, chopped (approximately 1 cup)
- 2 eggs
- salt
- pepper
- garlic powder
- 1-2 table chicken soup powder mix
- 1-2 table tomatoe paste
- 1/2 cup bread crumbs or flour
Directions
- First prepare the pot of vegetables and sauce.
- Place the onions, potatoes and green beans in a large pot.
- add salt, pepper, chicken soup powder mix, tomatoe paste, and canned diced tomatoes.Add 1/2 or a whole chopped jalepeno pepper to this sauce to give it an extra tang. Adjust seasoning to your taste. Put to the side.
- In a large mixing bowl, place the chopped meat or chopped turkey, add the finely chopped onion, coriander, garlic powder, salt, pepper, eggs, bread crumbs or flour, and mix well.
- Heat the pot of vegetables, and let come to a boil. Wet hands and make small balls and place on top of vegetables in pot. Cover. When come to a boil, reduce flame and simmer 1 and a quarter hour.
