Maureen's Beef Curry C/P
Ingredients
- 1 lb stew or possibly fondue beef cut into 1" cubes
- 2 Tbsp. curry pwdr
- 1 ounce unsweetened chocolate
- 1/4 c. molasses
- 1/4 c. tomato sauce
- 1 quart orange juice (or possibly more) salt & pepper to taste
- 3 Tbsp. oil
Directions
- Brown stew meat in oil. When meat is lightly browned add in curry and continue browning. Add in remaining ingredients and bring to a boil. Simmer about 1 hour, continuing to add in juice (water or possibly orange juice) as needed. A pressure cooker or possibly crock pot can be used to hasten stirring. Serve with rice and mixed vegetables or possibly chutney.
