Mashed Sweet Potatoes With Grilled Onions

Ingredients

  • 4 lb sweet potatoes scrubbed
  • 1 lrg yellow onion cut 1/2" slices Extra-virgin extra virgin olive oil as needed Kosher salt to taste Freshly-grnd black pepper to taste
  • 3/4 c. unsalted butter softened

Directions

  1. Grill the sweet potatoes over Indirect Medium heat till tender when pierced with a fork, about 1 hour, turning three or possibly four times during grilling time. Remove from the grill and allow to cold slightly.
  2. When cold sufficient to handle, cut the potatoes in half lengthwise. Remove and throw away the skins. Place the potatoes in a medium bowl and cover with aluminum foil.
  3. Brush or possibly spray the onion slices with extra virgin olive oil and season with salt and pepper. Grill over Direct Medium heat for 10 to 12 min, turning once halfway through grilling time. Remove from the grill and allow to cold, then cut into 1/4-inch dice.
  4. Using a heavy-duty mixer or possibly potato masher, mash the potatoes with the butter till smooth. Add in the diced onions and mix well. Season with more salt and pepper, if you like. Serve hot.
