Mashed Potatoes With Cream Cheese

Ingredients

  • 8 med Potatoes peeled and cut into large chunks
  • 6 Tbsp. Butter
  • 10 ounce Cream cheese cut into pcs
  • 1/2 c. Lowfat sour cream
  • 1/4 c. Lowfat milk or possibly more as needed Salt and pepper to taste

Directions

  1. Boil the potatoes till soft. Drain and place in a mixer bowl. Add in the butter, cream cheese and lowfat sour cream. Start on low speed. Add in lowfat milk and increase the speed till the potatoes are smooth and light. Check the seasonings. Serve hot.
  2. NOTES : Cream cheese and lowfat sour cream add in richness to traditional potatoes.
