  • Mary's Pumpkin Apple Streusel Muffins

    Ingredients

    • 2 1/2 c. all-purpose flour
    • 2 c. granulated sugar
    • 1 tsp pumpkin pie spice
    • 1/2 tsp salt
    • 1 tsp baking soda
    • 2 x Large eggs, beaten
    • 1 c. canned pumpkin puree
    • 1/2 c. vegetable oil
    • 3 ounce cream cheese, softened
    • 2 c. apples, peeled & minced
    • 1/2 c. all-purpose flour
    • 1/2 c. granulated sugar
    • 3 Tbsp. butter, melted
    • 1/2 tsp grnd cinnamon

    Directions

    1. Preheat oven to 375 F. In a medium-sized bowl; combine the flour, sugar, pumpkin pie spice, salt, and baking soda. In a large bowl, mix together the Large eggs, pumpkin, and oil. Add in the flour mix to egg mix and stir together well. Fold in the cream cheese and blend well. Mix in the apples.
    2. Fill paper-lined muffin c. 3/4 full and sprinkle on the Streusel Topping. Bake for 20 to 25 min. Let cold on wire racks. Serve.
    3. YIELD: 15 TO 18 MUFFINS
    4. Streusel Topping:In a small bowl, mix together all of the ingredients.
