  • Marlin With Spicy Almond Crust

    Ingredients

    • 1 c. Lightly packed parsley leaves
    • 1/2 c. Whole natural almonds, toasted *
    • 1/4 c. Lemon juice
    • 2 Tbsp. Water
    • 1 1/2 tsp Grated orange peel
    • 2 lrg Cloves garlic, coarsely minced
    • 1/2 tsp Grnd cumin, or possibly more to taste
    • 1/2 tsp Salt
    • 1/8 tsp Red pepper flakes, or possibly more
    • 4 x Marlin steaks 6-ounce each *, 3/4" thick Lemon slices, for garnish

    Directions

    1. Heat oven to 400 degrees. Combine all ingredients except fish and lemon slices in bowl of food processor fitted with steel blade. Pulse on and off till mix forms a rough paste. Place fish in shallow baking pan. Spread tops proportionately with almond mix. Bake in center of oven 12 to 15 min till fish is opaque throughout. Garnish with lemon slices.
    2. Servings: 4
    3. * To toast almonds, spread in an ungreased baking pan. Place in 350 degree oven and bake 5 - 10 min or possibly till almonds are light brown; stir once or possibly twice to assure even browning. Note which almonds will continue to brown slightly after removing from oven.
    4. * Other hard-fleshed fish, such as halibut, can be substituted for the Marlin.
