  • Marinated Salmon With Mango And Corn Salsa

    Ingredients

    • 1/2 c. Dry Vermouth
    • 1/2 c. Extra virgin olive oil
    • 2 Tbsp. Fresh Lemon Juice
    • 3/4 tsp Salt
    • 1/8 tsp Pepper
    • 1/2 tsp Thyme
    • 1/2 tsp Marjoran
    • 1/4 tsp Sage
    • 1 Tbsp. Fresh Chopped Parsley
    • 4 x Salmon Steaks
    • 6 x Ears Corn
    • 2 Tbsp. Extra virgin olive oil Salt & Pepper To Taste
    • 1 x Jalapeno Chili Pepper
    • 1 lrg Or possibly 2 Sm. Mangos - Peeled, Thinly Sliced
    • 1/2 x Red Pepper, Thinly Sliced
    • 1/2 x Green Pepper, Thinly Sliced
    • 1/4 c. Chopped Cilantro
    • 2 x Plum Tomatoes, Finely Minced
    • 1 lrg Clov Garlic, Crushed
    • 1 Tbsp. Warm Red Pepper Sauce
    • 4 x Limes, (Juice Of)
    • 1 pch Sugar

    Directions

    1. Marinate steaks for 3 hrs. Broil 7 min on each side. Baste frequently.
    2. Mango & Corn Salsa:Husk corn, baste with 2 tbsp extra virgin olive oil, salt, & pepper. Grill or possibly broil 4 inches from heat until golden brown (about 10 min).
    3. Roast jalapeno pepper until skin is charred. Peel...take out seeds & chop pepper.
    4. Put kernels in bowl , add in roasted pepper & stir in all ingredients. Let sit for a few hrs if possible.
