Ingredients

  • 2-3 packages of lasagna OVEN READY noodles
  • 2 jars Ragu plain Alfredo sauce
  • 1 16 container ricotta cheese
  • 1 16 container large curd cottage cheese
  • 2 12oz package Queso Munster (in the Mexican cheese section)
  • 1 8oz package white cheddar cheese
  • 1 wedge Romano cheese
  • 1 bag frozen spinach
  • 1 big egg plant
  • 1 1/2 lb. yellow squash
  • 1 1/2 lb. zucchini squash
  • 2 lb. ripe tomatoes
  • 16 oz. baby Bella mushrooms (Cremini)
  • butter
  • olive oil
  • head of garlic
  • fresh basil

Directions

  1. Mix Alfredo Sauce, Ricotta Cheese and Cottage Cheese. Add garlic and basil; set aside. In a 3 inch roasting pan pour small amount of sauce to coat bottom of pan. Layer bottom of pan with noodles, vegetables, sauce, and cheese. Repeat layers. Bake at 350 degrees for 60 minutes.
