Maple Sausage Spinach Pie (easy, easy, easy)
This is a made up recipe that was delicious so I don't want to forget it. Plus, my kids ate fresh spinach without complaining. Should have measured the cheese but I didn't. The maple sausage gives this a sweet taste but it would probably be good with a spicy italian sausage or a sage sausage. For lower fat version switch the cheese and use turkey sausage. Ingredients
- 2 Pillsbury pie crust. (1 box rolled crust.)
- 1 pound Jimmy Dean Maple sausage
- 1/4 cup (guessing) ricotta cheese
- 4 oz. shredded Italian cheese blend (little over half of an 8 oz bag)
- 1 egg
- 2 Lg. handfuls of fresh spinach
- Fresh graded parmesan cheese.
- Salt and pepper. (to taste)
Directions
- Roll 1 pie crust out on pizza pan.
- Brown and crumble maple sausage.
- While sausage is cooking. Spread ricotta cheese evenly over pie crust but keep it about 1/2 inch from the edge of the crust. (Used a rubber spatula and didn't put it to thick. Maybe 1/8th inch thick.)
- When the sausage is done stir in spinach until wilted. (I put 2 or 3 bounty paper towels in a glass bowl and then put the mix on top of the paper towels. Then took another towel to blot up extra oil.)
- Spread the mix over the ricotta cheese but keep it off of the border of the pie shell.
- Sprinkle with salt and pepper to taste.
- Cover the meat evenly with the Italian cheese mix.
- Place the second pie crust on top.
- Crimp the edges together making a cute little design.
- Scramble egg in a small bowl and brush over the top crust. Just to glaze it.
- Sprinkle with parmesan cheese.
- Bake at 350 until golden brown. (I also forgot to set the timer, maybe 30 minutes.)
- Let cool 3-5 minutes before cutting.
- This made 3 servings in my house but it probably should have been 6 servings.
