Maple Roasted Brussel Sprouts

I came up with this recipe, after hearing someone talk about having something similar in a restaurant. Thanksgiving was approaching, and we were having a guest who loved brussel sprouts, and I wanted to please my guest, but also tempt several children who normally ran for the hills at the thought of the usual braised ones I'd served in the past. They were a real hit. It serves 4 if this is the only vegetable side you are serving, but can serve 6 or more if it's in addition to other vegetable sides.

Ingredients

  • 2 lbs brussel sprouts
  • 3 tbsp olive oil
  • 2 tbsp maple syrup
  • sea salt & pepper

Directions

  1. Preheat oven to 425ºF.
  2. Wash sprouts and remove yellowed and discolored leaves, then cut each one in half and place in medium sized bowl. In a small bowl, whisk together oil and syrup ’til emulsified, then pour over sprouts. Using your hands rub oil/syrup mixture over all sides of the sprouts until they are completely coated then place them in a roasting pan. Sprinkle with several good grinds of sea salt & black pepper. Bake in oven between 20 to 30 minutes, until they are caramelized (checking occasionally after 20 minutes. You can also insert a thin sharp knife in and if it inserts easily they are done).
