  • Maple Oatmeal Muffins

    Ingredients

    • 2 c. Unbleached all purpose flour
    • 1 c. Quick-cooking oats
    • 2 tsp Baking pwdr
    • 2 tsp Grnd cinnamon
    • 1/2 tsp Baking soda
    • 1/2 tsp Salt
    • 1 c. Low-fat buttermilk
    • 3/4 c. Unsweetened applesauce
    • 1/2 c. Pure maple syrup
    • 1/2 c. Packed golden sugar
    • 1/4 c. Vegetable oil
    • 1 lrg Egg
    • 2 tsp Vanilla extract

    Directions

    1. These tempting, reduced-fat muffins are a nice way to get started in the morning.
    2. Preheat oven to 400 F. Line twelve 1/3-c. muffin c. with paper liners.
    3. Combine first 6 ingredients in large bowl and stir to blend. Whisk buttermilk, applesauce, maple syrup, brown sugar, vegetable oil, egg and vanilla in medium bowl till well blended. Add in to dry ingredients and stir just to incorporate (don't overmix).
    4. Divide batter equally among muffin c. (batter will reach top of c.).
    5. Bake till muffin tops are golden and tester inserted into center of muffins comes out clean, about 28 min. Transfer to rack and cold.
    6. Makes 12
