  • Maple Mustard Glazed Pork Roast

    Ingredients

    • 2 lb pork tenderloin
    • 2/3 c. Maple syrup
    • 3 Tbsp. Dijon-style mustard
    • 2 Tbsp. Cider vinegar
    • 2 Tbsp. Soy sauce Salt and pepper to taste

    Directions

    1. Stir together maple syrup, mustard, vinegar, soy sauce, salt, and pepper. Spread proportionately over pork roast and place in a shallow pan. Roast pork in a 350-degree oven till internal temperature measured with a meat thermometer, reaches 160 degrees, about 45 min to 1 1/4 hrs. Remove from oven and let rest 10 min before slicing to serve.
    2. Since we are going out for Thanksgiving dinner I have been doing some cooking which will capture some of my favorite flavors which I might miss at the restaurant. Here are some good recipes.
    3. The sweet potatoes were delicious-originally posted to the TNT holiday swap by Kathi Sandler. I scaled the recipe down to 3 servings and it scaled wonderfully. Along with which we had the Maple-Mustard Pork Roast posted to Eat-L by Claudia Knowles. I used pork tenderloin to cut down on the fat. I think I might marinate this in the sauce next time to get more of the delicious flavor. We also had creamed onions. What a fabulous meal of favorites.
