  • Maple Herb Roasted Chicken

    Ingredients

    • 2 Tbsp. Extra virgin olive oil
    • 1/4 c. Diced onion
    • 1/4 c. Maple syrup
    • 1 c. Tomato sauce
    • 1 Tbsp. Brown sugar
    • 2 Tbsp. Cider vinegar
    • 1 x Lemon, juice of
    • 1 x Roasting chicken Herb bunches - rosemary, thyme, basil etc. Salt and pepper

    Directions

    1. Directions: In a sauce pot, heat the extra virgin olive oil and onion. Saute/fry for 3-4 min till tender. Stir in the maple syrup, tomato sauce, brown sugar, vinegar and lemon juice. Simmer for 20 min to combine flavors. Remove from heat and allow to cold. Pat dry chicken and pour sauce over chicken.
    2. Let marinate overnight in the refrigerator. To roast, place chicken in baking dish. Place 1/2 of the fresh herbs and leftover lemon rinds inside cavity of the chicken. Put remaining herbs and marinade on top. Season with salt and pepper. Place in a 350 degree oven, covered, for 45 min.
    3. Remove cover and continue to roast, basting often for another 45 min or possibly till chicken is cooked through.
