Ingredients

  • 1 lb pork bacon
  • 8 cups Spanish onions
  • 8 cups sliced carrots
  • 8 cups sliced celery
  • 8 each bay leaf
  • 2 Tbsp red pepper flakes
  • 2 Tbsp dried tarragon
  • 4 cans tomatoes, diced
  • 8 cans chopped clam and juice
  • 3 cups diced potatoes
  • 8 oz parsley

Directions

  1. In a tilt grill, cook bacon over medium heat until fat is rendered.
  2. Add onions and saute until translucent.
  3. Add carrots and celery and stir to coat.
  4. Add bay leaf, red pepper flakes, and tarragon.
  5. Cook vegetables and seasonings until tender.
  6. Add tomatoes and clam juice.
  7. Bring to a simmer.
  8. Add potatoes and simmer until tender, about 20 minutes.
  9. Add parsley and clams.
  10. Simmer for 10 minutes and serve.
